The recipe itself is insanely simple, any novice (eg me) can
follow it. All you need is:
1 pack of brownie mix, 1 pack of cookie dough, 2 packs of oreos and eggs.
Firstly preheat your oven to 180°C and line a baking tray with grease proof paper – I used a medium sized
square tin which made approx 16 brownies.
So first step is to simply follow the instructions
on the cookie mix box until you have gooey cookie dough, Rosie suggests keeping
the mixture moist as you'll be baking it for longer than suggested. Once you’ve
got a nice gooey cookie dough, ‘squidge’ the dough into your lined baking tray until
it covers the bottoms...I put a bit tooo much water in my dough so it was quick
hard work slopping the cookie paste into the tray, but you get the general
idea!
Next, my favourite step, is to cover this layer with your Oreos. I used a mixture of double stuffed and regular Oreos and followed Rosie’s strict instruction to eat the broken oreos as you go....
Now it’s
time for the top brownie later. Again, simply follow the instruction on the
back of the pack and then pour over your oreos.
Foolishly,
I decided to keep mine in the oven for slightly longer than 30 minutes. DO NOT
DO THIS! Not that it ruins the recipe or anything, but if you want a nice
crunchy top with a gooey centre, then 30 minutes is more than enough. My little
brownies were just slightly overcooked so they were no longer gooey....but they
were delicious none the less!
